From the traditional Chinese dumplings and dishes that Lu and her husband, Linjie Gu, plan to serve, to an array of other cuisines, the food truck court will be a veritable melting pot of global flavors.The decision to scale down the initial plan from 10 to 6 food trucks was a strategic move to ensure ample space for maneuvering and efficient operations. "We only have six food trucks, so I hope we can make a global food truck park," Lu expressed, showcasing her vision for a cohesive and harmonious culinary destination.

The food truck court not only promises to delight the taste buds of Waterville residents but also serves as a platform for entrepreneurship and community engagement. However, the project team remains optimistic, with Allen suggesting that paving may be considered in the future if the food truck court proves to be a resounding success.The food truck court's location on a half-acre lot along Kennedy Memorial Drive, within the Contract Zoned District/Commercial-A, provides a strategic and accessible setting for the venture. The zoning regulations, which mandate an 8 p.m. closing time, will ensure a harmonious coexistence with the surrounding community.

Mitchell School and her involvement in the Discovery Play Group at KVCC demonstrate her multifaceted talents and her dedication to serving her community.
